Recipe of the Week: Pumpkin Spice Protein Smoothie

(*too bad it only lasts about 10 days, and then it snows).

Alas, I tend to make the most of our narrow window between 70 degrees and 7 degrees.

Fall also means pumpkin EVERYTHING!!!! Pumpkin spice lattes, pumpkin candles, pumpkin Oreos (mmmmhmmmm you want to come over to the Flexible Dieting Dark Side now, don’t you?).

Yep, pumpkin is pretty great and actually pretty darn good for you. By itself anyway. It’s when you start adding all the sugar and whipped cream that things really get jacked up). Alone it’s low in calories, high in fiber and full of helpful antioxidants.

So, in honor of the season and the current national obsession, I decided to create my own protein-packed pumpkin spice smoothie ( eat your heart out, Starbucks).

(Yes, I cheated and I used canned pumpkin, but I’m sure if you were feeling super crafty you could scoop and puree’ your pumpkin fresh and then roast the seeds. Apparently they’re pretty good for you too)

All hail the mighty pumpkin spice!  

Pumpkin Pie Protein Smoothie 

Makes one serving

Ingredients

One Cup unsweetened vanilla almond milk

1/2 cup canned pumpkin

1 scoop vanilla protein powder ( I used Vanilla EatSmart protein by Isatori)

1 tsp pumkin pie spice

1-2 drops stevia

2-3 ice cubes

Combine all ingredients in a blender until smooth.

Top with additional pumpkin pie spice if desired and/ or low fat whipped cream

Nutrition information: cal: 220 carbs: 18g Protein: 22g Fat: 7g Fiber: 6g
